Generally speaking, I've had good experiences with Dallas. It will serve well most of the US. But also keep in mind the population density of the US.
I still prefer diverse PoPs in the US whenever possible. Usually Ashburn/NY + Dallas/Kansas + Los Angeles. Depends if what you want to host is latency sensitive or not. If it's a website, you can also just have cache PoPs.
Avoid Texas, very bad laws such ID scans required for user registrations, not good for speech, see latest bullshit where they try to get discord blocked outside of texas
Dallas is a great location if you want one central point to cover the US well. Chicago is also good, maybe even a little better.
Now your users may not notice at all, depending on what you're hosting. It does depend on how much it matters, but Dallas or Chicago would be go-tos for me, but there's a number of other good ones as well. You probably don't want to do Seattle or Florida in this case.
Denver might also be decent, but I am guessing that you'll get the lowest latency per capita in Chicago. Dallas is totally fine though. The only thing I don't like about Dallas is putting datacenters in a region that needs so much cooling.

Over half of the US states have online ID laws now. If you host based off of that, you're excluding major DC/IX hubs like Texas, Virginia, Florida, California (soon), etc. Social media/porn ID laws will unfortunately become normal, but it would be silly to base where you host off of that. Eventually you'll have to exclude USA, European Union states, etc as a whole from your options.
