I'm not whining, I am failing to understand the incentive of "buy before the price increases (when you just saw it at a lower one)"... I thought it was "buy before another one buys it".. Or could it be because some buyers showed up and purchased the item THEN it increased?

Yeah that's how it works.
Except it's weighted in a way where if not enough people buy it, then it keeps going down because it likely will never catch up, until it does, in which case it'll likely never stop going up. If we updated the price every 1 minute instead of half an hour, it'd bounce up and down about every 5 to 10 minutes. But the way it's done right now to give warnings and such means it takes several hours for it to bounce up and down and super delayed reaction.
